Abstract

Abstract Orthogonal experiments were used to select the best conditions for enzymatic hydrolysis of fish scales. Using 2709 alkaline protease, the effects of factors such as enzyme amount, solid concentration, reaction temperature, and enzymatic hydrolysis time on the enzymatic hydrolysis reaction were investigated to determine the optimal conditions. pH The selection was based on the optimal pH value of existing experimental enzymes, and the degree of hydrolysis and the amount of free amino acids were used as detection indicators. The results showed that alkaline protease 2709 should be used for enzymatic hydrolysis of fish scales, and hydrochloric acid and calcium oxide can be used as softening pretreatment. To achieve a higher degree of hydrolysis of fish scale protein, the optimal temperature for enzymatic hydrolysis is 50¡ãC, the amount of enzyme should be 3.0%, the optimal time for enzymatic hydrolysis is 5 hours, and the substrate concentration should be 10%. Hydrolyzed fish scale protein has good Water absorption, emulsification, foaming and solubility; hydrolyzed protein also has good scavenging ability for hydroxyl radicals, its IC50 is 2.1mg/mL, and the maximum scavenging rate is 93.6%
