Abstract

This study uses the rapeseed protein hydrolysate (RPH) obtained from the enzymatic hydrolysis of “double-low” rapeseed Ningza No. 19 with Alcalase 2.4L as raw material. The active peptide components were separated by ultrafiltration and gel chromatography, the antioxidant activity of the enzymatic hydrolyzate and each separated component was studied, and the component with the highest antioxidant capacity was analyzed for amino acids. The results showed that RPH was separated into 4 groups of peptide components with different molecular mass ranges by ultrafiltration, among which RPH-P4 (molecular mass <3 kD) had the highest antioxidant activity; RPH-P4 was separated by Sephadex G-15 gel column After separation, three elution peaks were obtained, and their activities were collected and measured. The study found that the antioxidant capacity of RPH-P4-S3 was much higher than that of the other two components (P<0.05), and the oxygen radical absorbance capacity (ORAC) ), cellular antioxidant activity (CAA), and the EC50 values of intracellular CAA experiments are (1 951.90¡À20.35) ¦Ìmol TE/g, (143.38¡À4.11) ¦Ìmol QE/g, (45.63¡À3.67) ¦Ìg respectively. /mL; an amino acid analysis was conducted on RPH-P4-S3, and it was found that its antioxidant amino acid content reached 72.90%, and its essential amino acid content was 53.52%. Research shows that the isolated component RPH-P4-S3 of rapeseed protein Alcalase 2.4L enzymatic hydrolyzate has high antioxidant activity and nutritional value, and can be used as a functional ingredient for the development of antioxidant-related functional foods and health products.   For further details regarding this article and its research, please do not hesitate to contact our team for assistance.
