Abstract

In order to provide a basis for wheat quality improvement, the strong-gluten wheat variety Gaocheng 8901 and the weak-gluten wheat variety Shannong 1391 were used as materials, and different nitrogen levels were set to study the particle size distribution characteristics and characteristics of grain gluten macropolymers (GMP). Response to nitrogen levels. The results show that the particle size of wheat grain GMP particles ranges from 0.375 to 200 ¦Ìm. The volume distribution of GMP particles generally changes in a bimodal curve, with the volume percentage of GMP particles <12 ¦Ìm ranging from 11.2% to 45%, and the volume percentage of GMP particles >12 ¦Ìm ranging from 55.0% to 88.8%. Compared with the weak gluten wheat Shannong 1391, the strong gluten wheat Gaocheng 8901 has a higher proportion of >12 ¦Ìm particles. The number distribution of GMP particles showed a unimodal distribution, and the volume percentage of 90 ¦Ìm particles increased, indicating that appropriate nitrogen application could significantly increase the proportion of large and medium GMP particles. Excess nitrogen is not conducive to the formation of large gluten aggregates in wheat grains.
