Preliminary Study On The Distribution Characteristics Of Paramyosin In Muscles Of Marine Economic Molluscs

Abstract
Taking the protein of muscle tissue as an entry point, we explore the chemical characteristics and differences of the main edible parts of marine economic molluscs, and conduct a preliminary exploration of the distribution characteristics of paramyosin in molluscs. The research objects are commercial living economic soft animals, including five species: Philippine clam, hairy clam, red snail, wrinkled abalone and long octopus. First, the chemical composition and amino acid composition of the edible parts were analyzed and compared. The results showed that there is little difference in the general chemical composition among the five species of molluscs. The muscles all contain 17 kinds of amino acids, and the contents of leucine and lysine are both high. , there was no significant difference in amino acid content. Then, the muscle tissue protein components and the content distribution of each component were analyzed and compared. SDS-PAGE analysis showed that the muscles of the five molluscs all contained myosin, actomyosin, paramyosin and tropomyosin. Protein and other important components; at the same time, unknown protein polymers with a molecular weight higher than 200 ku are contained in the muscles of Philippine clams, hairy clams and wrinkled abalone. Based on the identification of mass spectrometry and further calculation of molecular weight, the protein polymer was determined to be a paramyosin polymer. In summary, it can be seen that the difference in the distribution of different soft-body muscle protein components is mainly reflected in paramyosin. Therefore, the distribution characteristics of paramyosin and its aggregates deserve further exploration.
