Abstract

Using soy protein isolate as the matrix, antioxidant films were prepared by adding rosemary, and the effects of the addition of rosemary antioxidants on the physical and chemical properties and antioxidant properties of the films were studied. The results show that the active protein membrane material prepared from rosemary and soy protein isolate has a smooth and transparent appearance and excellent mechanical properties, and its tensile strength exceeds that of low-density polyethylene materials of the same thickness. Different rosemary contents lead to different interactions between it and protein-based materials, resulting in different structures of the active protein membrane. Among them, the active protein membrane with a rosemary mass concentration of 0.25 g/L has a loose structure, which is The reaction between rosemary and free radicals provides convenience. Its inhibition rate on ABTS+ free radicals is greater than other active protein membranes, showing the best antioxidant performance.
