Abstract
This article analyzed the amino acid composition of 10 rice protein powder samples from different sources and calculated that the average nitrogen content of 17 amino acids was 13.48%, the standard deviation S was 0.19, and the coefficient of variation CV was 1.2%, indicating good repeatability. By setting the content ranges of asparagine and glutamine, it was calculated that the nitrogen content of rice protein ranges from 13.48% to 15.78%, that is, the protein coefficient is between 6.34 and 7.41. Further, through the analysis of all components of high-purity protein samples Through analysis, the protein coefficient of rice protein was determined to be 6.70. The verified calculation results are more consistent with the real situation
