Abstract
Gluten macropolymer (GMP) is an important factor in determining the quality of wheat. During the development of wheat grains, GMP is stored in the endosperm of wheat grains in the form of spherical particles. Its content and particle size are affected by the subunit composition and environmental conditions. . Using winter wheat varieties with different ear types as materials, the relationship between nitrogen application level, gluten macropolymer content and particle size distribution of wheat grains was explored through field experiments. The results show that increasing the application of nitrogen fertilizer in the range of 0-240kg/hm2 can significantly increase the GMP content in wheat grains, while continuing to increase the amount of nitrogen application is not conducive to the accumulation of GMP in wheat grains. The particle size distribution range of wheat grain GMP particles is 0.375-256 ¦Ìm; the volume and surface area distribution of GMP particles both show a bimodal curve, and the number distribution shows a unimodal curve. Increasing the application of nitrogen fertilizer in the range of 0-240kg/hm2 can significantly increase the number percentage and volume percentage of >10 ¦Ìgmp particles, indicating that nitrogen application can promote the formation of large particle GMP. Different varieties show different responses to the application of nitrogen fertilizer. The grain GMP content and particle size distribution of the large spike variety Taishan 9818 are more sensitive to nitrogen fertilizer.
