Abstract

The optimal hydrolysis results of the two enzymes determined by orthogonal experiments show that the optimal hydrolysis conditions for Bacillus subtilis neutral protease are: enzyme amount 3.0%, temperature 60¡ãC, pH 7.0, time 4 h, protein The degree of hydrolysis is 91.3%; the optimal enzymatic hydrolysis conditions for papain enzymatic hydrolysis are: the amount of enzyme added is 3.0%, the temperature is 65 ¡æ, the pH is 7.0, the time is 4 h, and the degree of protein hydrolysis is 85.3%.
