Abstract

Pass soybean protein (SPI) through Asl. Through hydrolysis with 398 neutral protease, we can obtain highly valuable soybean hydrolysates such as polypeptides with good solubility, hydrogenated acids and ISSPH. This article discusses the degree of hydrolysis and viscosity changes of the enzymatic hydrolysis product of soybean high protein (SPH). The composition changes in the soluble supernatant and insoluble residue of SPH were analyzed by SDS-PAGE, semi-micro-Kjeldahl method, G-25 gel filtration, biuret method and ninhydrin method, and the hydrolysis was discussed.
