Abstract

Soy protein isolate is an important component of soybeans, contains a large number of active groups, has the advantages of renewable and biodegradable properties, and can become the main raw material for the preparation of environmentally friendly materials. Since the composition and conformation of soy protein isolate will have a significant impact on its functional properties, systematic research on the relationship between its structure and properties will undoubtedly help materials scientists develop new soy proteins with excellent properties in the future. The material is quite helpful. This article first introduces the composition of soybean protein isolate, the structure of its subunits, and the separation method of its two main components – ¦Â-soyconglycinin (7S globulin) and soybean globulin (11S globulin); then the soybean protein isolate is introduced. The research progress of the conformation of protein isolate under different conditions and its main physical and chemical properties, such as solubility and gelability, were introduced. Finally, the application of soy protein isolate in the fields of films, fibers, plastics and other materials was briefly introduced. Review.
