Abstract

In order to clarify the occurrence form of selenium in corn protein, high-performance liquid chromatography-mass spectrometry (HPLC-MS/MS) was used, combined with mass spectrometry database comparison and high-performance liquid chromatography-plasma mass spectrometry (HPLC-ICP/MS). ), to identify the structures of selenium peptides and selenium-containing amino acids in selenium-rich corn protein hydrolyzate. The results identified 5 small peptides, whose amino acid sequences are: SeMet-MeSeCys-Glu, Met-MeSeCys-Glu, MeSeCys-Glu-Asp, Ile-MeSeCys-Glu, ¦Ã-Glu-MeSeCys; 4 selenium-containing peptides were identified. Amino acids are selenomethionine (SeMet), selenoethionine (SeEt), L-seleno-methylselenocysteine (MeSeCys), and selenocystine (SeCys2). Selenium-containing amino acids and dipeptides were quantified with the help of standard samples. Five selenopeptides all contained MeSeCys, and only one peptide contained SeCys2; but among selenium-containing amino acids, SeMet had the highest content of (586.3¡À49.5)ng/ g, the lowest is SeCys2 (102.6¡À9.0)ng/g
