In order to obtain rice starch with good surface effect and small size effect, milling ultrafine pulverization technology was used to process rice starch, and its particle size, hydration capacity, powder characteristics and other properties were studied. The experiment found that ultrafine grinding can significantly reduce the particle size of rice starch. The starch particle size is reduced from the original 2639.9nm to 166.8nm. As the particle size of rice starch decreases, its hydration capacity increases significantly, and the specific surface area decreases from 2639.9nm to 166.8nm. 0.9393m2/g increased to 1.3523m2/g, the expansion force increased from 1.3ml/g to 2.32ml/g, and the water holding capacity increased from 2.17g/g to 4.44g/g; the powder fluidity was improved, the filling ability was enhanced, and the dispersion The degree increased from 83.1% to 87%. The results show that ultrafine rice starch has good physical and chemical properties and has broad application prospects.
